A cold store holds bands, not one setting

Fresh produce, dairy, meat, fish and confectionery each want their own range, and several of them are actively harmed by being held colder than intended. A single-chamber building forces everything toward one compromise setting, which is why larger sites are divided into chambers with independent plant and separate access. The commercial consequence is that a site's usable capacity depends on which chamber has room, not on how many positions the building contains.

Doors are the largest hole in the envelope

Every opening exchanges cold air for warm, humid air, which raises product temperature near the threshold, loads the refrigeration plant and deposits moisture that later becomes frost. Airlocks, fast-acting doors, dock shelters and strip curtains all reduce the exchange, but none of them survives a shift that props a door open to speed up loading. Supervision of door behaviour tends to deliver more temperature stability than any additional plant capacity.

Monitoring proves what happened when nobody was watching

Air temperature at a sensor is not the same as the temperature of product in the middle of a pallet, so monitoring has to be designed: sensors placed where the chamber is weakest rather than where cabling was easy, calibration on a schedule, alarms routed to someone who is actually on site, and records kept long enough to answer a complaint. When an excursion happens, the question is always whether the product was affected, and only recorded evidence can answer it.

The lobby is where most damage occurs

Goods spend their most vulnerable minutes outside the chamber: waiting for a vehicle, being checked at goods-in, standing on a staging lane. Practical control means chilled receiving areas, short and enforced exposure limits, staging that is loaded last and unloaded first, and vehicles that arrive pre-cooled. A building with excellent chambers and an unconditioned dock still breaks the chain, just out of sight of the temperature charts.

Hygiene and traceability sit alongside temperature

Food authorities expect the operator to identify hazards, control them and keep records proportionate to the risk, with the specific obligations set by the food safety authority in the territory concerned. On the floor this shows as cleaning schedules that survive a busy week, separation of raw and ready-to-eat products, and batch identity that stays intact through repalletising. These are process design questions, not paperwork produced ahead of an audit.
